Brie bakers are fancy little pots that you can find at your local grocery store or cooking supply store. They are fantastic for lots of things other than just baking brie, but it is totally worth it to have one for the clean-up process. Just pull out the parchment paper, rinse out your dish.. and you are done! No soaking a pot for hours to get cheese off the sides.
Also, the reason for avoiding triple cream is not because it is not delicious, it is because it can become too runny when baking. We used a soft cured brie.
