Greek Chicken Fried Rice

Ingredients:

  • 2 tbsp vegetable oil
  • 2 chicken breast & 2 chicken thighs (boneless/skinless – chopped)
  • ½ cup chopped red onion
  • 3 cups prepared white rice
    • best if prepared the day before & refrigerated uncovered on a sheet pan overnight
  • 2 eggs
  • 1 cup chickpeas (drained and rinsed)
  • ½ cup fresh parsley leaves (roughly chopped)
  • ½ cup feta cheese (crumbled)
  • ½ cup grape tomatoes (quartered)
  • ½ cup kalamata olives (halved or quartered)
  • 2 tbsp fresh lemon juice
  • ¼ tsp kosher salt
  • ¼ tsp fresh ground black pepper

Instructions:

  • Light your Hasty-Bake Charcoal Grill with a medium-sized charcoal fire directly under your Hasty-Bake Griddle (275-300 Degrees)
  • Heat the oil on the Hasty-Bake griddle, add chicken & cook until almost cooked through (about 5 minutes), stir frequently
  • Add onion & cook for about 1 minute, stir frequently
  • Add rice & cook for about 3 minutes, stir constantly
  • Push rice to sides and create a well in the center
  • Crack 2 eggs in well & scramble with wooden spoon until eggs are fully cooked
  • Mix cooked eggs with other ingredients
  • Add chickpeas, parsley, tomatoes, olives, lemon juice, salt & pepper and cook for 3 minutes, stir frequently
  • Add feta cheese and cook for 2 minutes, stir frequently
  • Transfer the greek chicken fried rice to a serving platter
  • Enjoy!
