Grilled Stuffed Portobello Mushrooms




  • 4 Portobello Mushrooms
  • ½ lb. fresh spinach
  • ½ cup onion
  • ½ cup of blue cheese crumbled
  • 2 garlic cloves
  • ¼ cup olive oil
  • ¼ cup balsamic vinegar


  1. Clean and rinse the 4 Portobello Mushrooms
  2. Remove stems from the mushrooms and black gills
  3. Raise your firebox to bake on your Hasty-Bake Charcoal Grill
  4. Bake the portobello mushrooms caps for 10 Minutes (300 degrees)
  5. Remove mushrooms from the grill and let cool
  6. Sauté onions and garlic in 1T oil until onions are translucent
  7. Add Hasty-Bake Gourmet Greek Seasoning and spinach to onions and garlic
  8. Sauté spinach until it’s wilted
  9. Spoon this mixture into the portobello caps
  10. Sprinkle blue cheese on top of the mushrooms
  11. Bake on your Hasty-Bake Charcoal Grill till cheese is melted (350 degrees)
  12. Glaze the grilled mushrooms with balsamic vinegar
