Bacon Wrapped Dill Pickles

Pickles.  You either love them, or you hate them.  There aren’t a lot of in-betweeners.  But everyone loves bacon.  If you’ve been looking for a new appetizer, side, or new method to satisfy a pregnancy craving, this might be the recipe for you.

This recipe will intrigue your guests and make for an unforgettable snack!  A crunchy pickle combined with crispy bacon would be great for game day or a summer cookout. With a great balance of sweet, sour, and smoky flavors, these are anything but ordinary.

Don’t knock ’em until you’ve tried ’em!

Ingredients

  • 8 dill pickle spears
  • 4 slices bacon (cut in half)
  • 1 Tablespoon Sweet Rub (I like Meat Church Honey Hog or OklaNola Pepper Co. Creole Honey)

Instructions

  • Preheat the smoker. Preheat your smoker to 275 degrees F with your favorite hardwood.
  • Wrap the pickles. Wrap each pickle spear in one of the bacon pieces. Secure tightly with toothpicks.
  • Season with Sweet Rub. Season the bacon wrapped pickle spears with Sweet Rub lightly on all sides.
  • Smoke the bacon wrapped pickles. Place the bacon wrapped pickles directly on the grates of your preheated smoker and close the lid. Smoke for 45 minutes to 1 hour, depending on how crispy you like your bacon. If you want even more crunch on your bacon, you can broil your bacon wrapped pickle spears for 2-3 minutes after they come off of the smoker.
  • Remove from heat and serve. Serve with ranch dressing or your favorite BBQ sauce for an awesome appetizer or snack.
