Bean and Hot Dog Casserole

Hot dogs can be used in many different ways. Often people resort to just grilling them and eating them. But we think that’s boring so we’re bringing you the creativity. We like to grill the hot dogs with a little Rub n’ Spice seasoning before adding them to the mix. We also prefer to do the whole cook on the grill, but you can saute on the stove top if that is your preference.

Ingredients

  • 1 green bell pepper, cut into 1/2-inch pieces
  • 1 large onion, coarsely chopped
  • 2 tablespoons vegetable oil
  • 1 (16-ounce) can baked beans
  • 1 (15-ounce) can whole kernel corn, drained
  • 1 (8-ounce) can tomato sauce
  • 2 tablespoons yellow mustard
  • 2 teaspoons chili powder
  • 1 pound hot dogs, cut into 1/2-inch pieces
  • 4 slices American cheese, halved diagonally, or 1/2 cup shredded cheese

Instructions

  1. Preheat the grill to 350 F.

  2. Lightly grease a 2-quart aluminum pan.

  3. In a griddle or cast iron skillet, sauté the onion and green pepper in vegetable oil for about 5 minutes, or until onion is tender. Add the beans, corn, tomato sauce, chili powder, and mustard; stir to blend. Add sliced hot dogs and stir to blend ingredients.

  4. Pour hot dog and beans mixture into the prepared 2-quart pan.

  5. Smoke in the preheated grill for approximately 25 minutes. Arrange cheese slices over the top of casserole and bake for 5 minutes longer, or until cheese has melted.
