Ingredients:
- 2 tbsp vegetable oil
- 2 chicken breast & 2 chicken thighs (boneless/skinless – chopped)
- best if brined overnight (water, kosher salt, sugar, and Hasty-Bake Gourmet Greek Seasoning)
- ½ cup chopped red onion
- 3 cups prepared white rice
- best if prepared the day before & refrigerated uncovered on a sheet pan overnight
- 2 eggs
- 1 cup chickpeas (drained and rinsed)
- ½ cup fresh parsley leaves (roughly chopped)
- ½ cup feta cheese (crumbled)
- ½ cup grape tomatoes (quartered)
- ½ cup kalamata olives (halved or quartered)
- 2 tbsp fresh lemon juice
- ¼ tsp kosher salt
- ¼ tsp fresh ground black pepper
Instructions:
- Light your Hasty-Bake Charcoal Grill with a medium-sized charcoal fire directly under your Hasty-Bake Griddle (275-300 Degrees)
- Heat the oil on the Hasty-Bake griddle, add chicken & cook until almost cooked through (about 5 minutes), stir frequently
- Add onion & cook for about 1 minute, stir frequently
- Add rice & cook for about 3 minutes, stir constantly
- Push rice to sides and create a well in the center
- Crack 2 eggs in well & scramble with wooden spoon until eggs are fully cooked
- Mix cooked eggs with other ingredients
- Add chickpeas, parsley, tomatoes, olives, lemon juice, salt & pepper and cook for 3 minutes, stir frequently
- Add feta cheese and cook for 2 minutes, stir frequently
- Transfer the greek chicken fried rice to a serving platter
