Grilled Watermelon Margarita

This refreshing summer cocktail is perfect for your next backyard grill-out or party! If you love fresh watermelon in the summer, you’ll love this grilled twist on a watermelon margarita!

Tip: This red cocktail is just the right hue for a 4th of July party!

Ingredients

  • 1 small watermelon (8-10 pounds)
  • 12 ounces 100% Agave Tequila (Silver or Blanco)
  • 3/4 cup of grilled lime juice (8-10 limes)
  • 2 ounces St. Germain Elderflower liquor
  • 1/4 teaspoon kosher salt
  • salt and sugar for rimming (optional)

Instructions

  1. Prepare Hasty-Bake for grilling. Lightly brush with oil.
  2. Remove rind from the majority of the watermelon, leaving a slice with rind on for garnish.
  3. Cut the watermelon in long strips for grilling, and the slice with the rind on into wedges for garnish. Slice the limes in half.
  4. Grill until both sides of the watermelon have grill marks and place in a shallow dish to cool and to collect the juices from the watermelon. Grill the limes flesh down until caramelized.
  5. Once cooled, cube stripes of watermelon into cubes and place cubes and place on a cookie sheet. Place a slit on the tip of the wedges and also place on cookie sheet. Wrap cookie sheet(s) in plastic wrap and place in the freezer until frozen. Take the remaining juice from the shallow dish and pour it into ice cub trays and freeze. Juice the limes, strain, and store in refrigerator until watermelon is frozen.
  6. To make the margaritas, first rim the glasses with equal parts sugar and salt.
  7. Then add all ingredients to a blender and puree until smooth. (You may need to do this in two batches)
  8. Pour into glasses and garnish with grilled watermelon wedge.
  9. Enjoy!
