Smoked Watermelon Chicken

Ingredients:

  • 1 Large Watermelon
  • 1 Whole Young Chicken (5-8 Pounds)
  • John Henry’s Chicken Tickler
  • Salt
  • Pepper

Instructions:

1.Cut a 1/4-inch-thick horizontal slice off the bottom of watermelon, so it won’t roll. Discard. Cut off the top third of the melon horizontally, then scoop out seeds and enough of the pulp from both remaining parts to make room for the chicken.

2. Season cavity of chicken with John Henry’s Chicken Tickler and sprinkle with a little pinch of salt and pepper

3. Place the whole chicken on the grill to char to get the color and smoked taste.

4.Place chicken in the larger part of the melon, and position the other piece of melon on top, securing with long skewers.

5.Place watermelon onto the Hasty-Bake Charcoal Grill and cook for 3 ½ hours around 325-350 degrees. Make sure to check the internal temperature of the chicken every hour.

6.Place watermelon on a tray and show it to guests. Return to the kitchen: remove the chicken and carve.
