Scrumptious Pumpkin Soup

Pumpkin carving is an age-old tradition that everyone loves but what about all of the pumpkin that gets thrown out? This year, prepare delicious pumpkin soup with the help of the BBQ grill.  This soup is perfect for cool, fall days and pairs well with our grilled bread!

Ingredients

Grilled Pumpkin Soup Ingredients:

  • 4 tablespoons olive oil, divided
  • One 4-pound sugar pie pumpkin
  • 1 large yellow onion, chopped
  • 4 large or 6 medium garlic cloves, pressed or minced
  • ½ teaspoon sea salt
  • dash of cayenne pepper (optional, if you like spice)
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ⅛ teaspoon cloves
  • Freshly ground black pepper
  • Tiny dash of cayenne pepper (optional, if you like spice)
  • 4 cups (32 ounces) vegetable broth
  • ½ cup full fat coconut milk or heavy cream
  • 2 tablespoons maple syrup or honey

Instructions

First, prepare the grill for direct cooking and pre-heat it to 350 – 400 degrees F.

Now cut the pumpkin into slices and grill them alongside the garlic and onion for 10-12 minutes until they turn golden brown.

Lower the heat on your grill to around 200 degrees F (or finish on stove top).

Take your basting pan, Dutch oven, or other grill-safe pot, add the pumpkin, garlic and onions in with the olive oil, salt, pepper, spices, cream, honey, and vegetable stock and let it simmer for  40-50 minutes.

Your grill-prepped pumpkin soup is ready now!

Serve in bowls with a generous swirl of cream for some extra decadence.
