Smoky Bacon Black-Eyed Peas

It’s almost the New Year and we all know the old tradition about black-eyed peas!  Let’s start the year lucky with this recipe inspired by Holy Smokes BBQ.

We recommend using a pork shoulder (or pork butt) pre-sliced bacon, but if you can’t find that then any thick-sliced bacon will work.  We have also recommended some of our favorite rubs in the recipe below.  Black-eyed peas are not typically a family favorite, but this recipe will have you wanting them more than just the obligatory once-a-year!

Ingredients

  • 2 cans of Black Eyed Peas
  • Bacon
  • Sweet and Savory or Carolina-style rub.  We recommend Heath Riles Sweet BBQ Rub.
  • SPG rub. We recommend Cattle Call or Kosmos SPG.
  • 1 tablespoon yellow mustard

 

 

 

Instructions

  1. Season bacon with Heath Riles Sweet BBQ Rub.
  2. Prepare smoker to approx. 185° F. Smoke bacon until fully cooked.
  3. Dump black eyed peas into cast iron skillet.
  4. Season liberally with SPG.
  5. Mix in yellow mustard.
  6. Place on smoker and smoke until heated through.
  7. Chop bacon and mix into black eyes peas.
  8. Serve, enjoy, and have a lucky year!
