Grilled Watermelon Salad with Honey-Lime Dressing

If you are looking for a unique summer fruit salad, this one is for you! The watermelon gets a caramel-y flavor when it is grilled and pairs really well the other flavors and textures in this recipe.

Tip: This salad is Red, White, and Blue so it is PERFECT for a 4th of July party!

Ingredients

  • 1 small watermelon (8-10 pounds)
  • 1 pint of blueberries
  • 1/4 cup of almonds
  • 1/4 cup feta cheese
  • 1 tablespoon chopped mint leaves
  • 3 tablespoons fresh lime juice
  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • 1 teaspoon Hasty-Bake Greek Seasoning
  • 1/4 teaspoon pepper
  • 1/4 teaspoon kosher salt

Instructions

  1. Prepare Hasty-Bake for grilling.
  2. Place the last 7 ingredients listed in a bowl and whisk to combine.
  3. Remove rind from watermelon and slice into large strips for grilling.
  4. Grill on both angles on both sides to create an X pattern.
  5. Add to a shallow dish to cool. Once cooled, slice into cubes and remove from juice. (salad will be too soupy if you use the juice)
  6. Add Watermelon to the bowl you will be serving it in and then add the blueberries and drizzle with the dressing. Stir gently to combine.
  7. Sprinkle the almonds and feta cheese over the top and garnish with more mint leaves to serve. Enjoy!
