Marinating can take your meat to a whole new level. These beef short ribs, marinated in a California red wine and slow-smoked on the Hasty Bake are a welcome departure from traditional smoked ribs. Rich and buttery with a hint of floral and fruit, it elevates the ribs to an elegant level. Give them a shot and see if you’ve found a new favorite way to smoke beef ribs. Thanks to. @BamaQTV for another great production!

Ingredients

  • 3 lbs beef short ribs, cut individually and halved
  • 1 bottle decent quality red wine (use a bottle you’d want to drink)
  • Your favorite beef seasoning (we recommend All Q’Ued Up’s Big Red Beef and Holy Moly)

Instructions

  1. Place ribs in bowl and cover in red wine, marinating for a minimum of 1 hour.
  2. Remove and coat with your favorite beef seasoning.
  3. Place on hot charcoal grill and sear all sides to form a crust.
  4. Move to the offset side of the grill, drop the temperature and allow ribs to smoke for another 2 hours.
  5. Wrap in foil and continue cooking until an internal temperature of 210° is reached.
  6. Remove from grill and rest for at least 30 mins.
  7. Cut off of bone and slice to serve.
